Caster sugar is a fine-textured granulated sugar, sitting between granulated sugar and icing sugar in grain size. As the crystals are very fine, they dissolve much faster than standard white granulated sugar, making it ideal for baking biscuits, cakes, muffins, meringues, syrups, and cocktails.
